The American Diabetes Association estimates that more than 25 million children and adults are either pre-diabetic, or have progressed to the most devastating mature form of the disease. Emerging evidence now clearly demonstrates that this insidious disease can be prevented and controlled with a diet naturally high in green leafy vegetables.

Diabetes Caused by Poor Diet and Lifestyle

Diabetes places a significant burden on an already dysfunctional health care system, costing in excess of $200 billion annually, and ranks as the seventh leading cause of death. The disease more than doubles the incidence of heart disease and greatly increases the risk of stroke, blindness, kidney disease and neuropathy.

Type II diabetes can be prevented and controlled with a sensible approach to diet. Since the proliferation of processed and refined foods in the American diet over the past half century and the introduction of high fructose corn syrup in the early 1970`s, diabetes cases have skyrocketed in a parallel fashion during this time.

Controlling Diabetes with Natural Diet

The results of a study published in the BMJ (British Medical Journal) reviewed six studies covering more than 220,000 people, concluding that one and one half servings of green leafy vegetables per day lowered the risk of Type II diabetes by 14%. This is significant because the finding provides validity to the understanding that diabetes is a disease caused by poor diet and can be improved through dietary modification.

The USDA recommends five servings of fruits and vegetables each day, and still many nutritionists would argue that this is insufficient to reap the full antioxidant and nutrient benefits from leafy greens. Less than 1 in 5 people eat the recommended number of daily servings, yet optimal protection from diabetes and other afflictions requires more than 10 servings each day. The BMJ study found a small degree of risk prevention from just one and one half servings of fruits and vegetables, but didn’t explore other equally important dietary interventions.

Cut Refined Carbs, Sugar and Processed Foods

As diabetes is a disease precipitated by metabolic imbalance, controlling blood sugar and insulin are critical components to prevention and treatment. Living with Type 2 diabetes, you are no stranger to the potential dangers of a high-fat diet. While it’s important to know how much fat is in your overall diet, it’s also important (if not more so!), to understand that not all fats are created equal. Fats to Limit:

Saturated fats: Saturated fats are naturally found in animal and few select plant foods. Because saturated fats raise blood cholesterol levels, too much of them can become a risk factor for heart disease. Diabetics are already at high risk for heart disease, so limiting your saturated fat can help lower your risk of having a heart attack or stroke.

Examples: meat skin, cream sauces, lard, butter, high-fat meats like sausages, pork belly, bacon, and bologna.

Trans-fats: Trans-fats are made when a process called hydrogenation turns a liquid fat into a solid fat, such as making vegetable shortening from vegetable oil. Trans-fats, like saturated fats, raise blood cholesterol, but are far worse for overall heart health. They are best to be avoided all together.

Examples: shortening, margarine, grocery store baked goods (including cookies, muffins, and cakes), processed snack foods (various chips and bagged snack blends), and anything that lists “hydrogenated oil” or “partially hydrogenated oil”.

Fats to Include: Don’t think that you can’t eat any fat whatsoever. There are a number of naturally-occurring fats that have been shown to improve health and longevity when consumed in moderation… they do this by lowering bad (LDL) cholesterol. It can be tedious to try and memorize the specific names for each healthy fat, but you don’t really need to, as long as you can remember which foods contain the healthy fats.

Liquid vegetable oils, especially those with names you can recognize as real plants, are great choices… think olive oil, peanut oil, corn oil, sunflower oil, and flaxseed oil.

Similarly, butters made from plants and nuts are great choices, such as peanut butter, almond butter, sesame seed butter (you may know it as tahini), cashew butter, and sunflower seed butter. (These are delicious smeared over a piece of whole grain bread for a light breakfast or snack). Whole nuts and seeds will contain the same healthy fats inside; just don’t go “nuts” when eating them! A small sprinkle on a salad or over a brown rice pilaf is enough.

Aside from plant fats, seafood is an excellent choice of healthy dietary fat. Which fish are best to eat? Believe it or not, seafood is one case where bigger is not better! Here you are all ready for an exciting afternoon of freezing your excess abundance of fresh vegetable that you have recently picked from your garden. You are in your kitchen and you have gathered all your necessary equipment and supplies required for completing the task at hand.

As you start to do your freezing assignment you quickly recall that most of the vegetables that you will be working with that afternoon will need some sort of blanched prior to being to placing them in your freezer. Sitting down to take a break you ponder just why you would need to blanch these items of produce before freezing them. Let’s try and simply that answer the best we can.

All vegetables have various enzyme actions which must be stopped prior to our freezing them for future use. By blanching our fresh foods we are able to not only stop this action but in addition we are afforded the opportunity to retain the vegetables desirable color, its flavor and the original texture. After determining the why of blanching your mind quickly races to the how involved.

To facilitate blanching of your vegetables you merely need to heat the vegetable slightly in a pot of boiling water. There are several methods which you can employ to blanch your produce. The choice will be up to you and what facilities you have at your disposal. You can employ either water or a steam style blanching. It is important to remember that when blanching your vegetables they will only remain in the hot, boiling water a short period of time, generally two to seven minutes at best. Blanch them only for enough time to begin the softening process. Now, the key to success lies in the fact that once you have placed them in the water for blanching you will need to remove them from the boiling water and immediately plunge them into an ice filled bowl to stop any further enzyme actions.

Now you are at the point in the process where you can take the vegetables and fill your freezer bags with them to finalize your afternoon of freezing your garden vegetables. You will want to remember that by taking the time to complete this step your final vegetables will retain their flavor longer and present a fresher tasting dish to set on your table. Naturally, blanching times will likely vary from one vegetable to another and should be checked according to the food which you are freezing.

Fruits and Vegetables For Your Health

Home grown and organic, or at least natural, fruit and veggies are the best. You can be allergic to chemicals used in the growing of produce, even if you are not allergic to the product itself. If you can’t grow any fruit or vegetables then visiting a local farmer’s market works great, or even a health and natural food store in your area. If produce is grown within a hundred miles of your home, then so much the better. Long transport reduces nutrient value of vegetables and fruit.

I am trying one of those “grow your own vegetables upside down” container gardens, because I want to have it handy on the patio right outside my door. And, it’s much easier to maintain that way as well. After visiting a famous theme park area in Florida many times, I was inspired by their huge hydroponic and misting and other unusual agricultural methods of growing produce, greenhouse. While I started my hanging upside down garden with a kit, I soon found that growing the seedlings from seeds doesn’t work very well, so I purchased one tomato plant as a starter. All you need to do is make sure that there is about a one inch hole in the bottom of a container and that you have a hook to hang the pot on, a few feet off the ground.

Use some of that coconut fiber and after popping the seedling plant in through the bottom, place a few pieces of the fiber over the roots, then potting soil. Hang it up, keep it misted watered, and feed occasionally. Supposedly, the tomatoes won’t mind being upside down and will grow like weeds. You can also try this with cucumbers and a few other plants. Plants that grow off of a single stem then branch out, or vegetables or fruits that vine, should work great. We’ll see what grows in the Summer. Make sure that the plants get appropriate, but not too much, sun.

There are dwarf fruit trees that can be grown in a small space and if you have a climate that is suitable for citrus or apples, then these plants should do well. It would be more difficult to grow bananas but many varieties of citrus such as oranges and lemons and limes and tangerines and even kumquats could be grown full sized, on a dwarf tree. If you are lucky enough to have a large garden then the regular method of growing your own fruits and vegetables will work great. It is some work, but a benefit is that you can get good exercise while you are at it. And again, if you have no space at all for growing healthy fruits and vegetables, then going to the local heath food store or market, will work out just fine.
